This is for somewhere for the dirty spoons to be put to stop those people who put their used spoon back in with the clean spoons or dump it on the counter or waste a clean cup to hold their dirty spoon. I have made and used 2 of these and they save some clean-up work and keeps the dirty spoons all in one place.
