The coin slots in the center console of the MK7 GTI are generally useless and there is already a 12V socket in the covered storage so I thought, why not cover these useless features with a flat panel that I could use to mount other accessories to?

I recommend using ABS or a more temperature resistant filament if you have warm summers in your area, otherwise PETG should be fine.

BTW, Naga red ABS is a great match to the red trim accents in the GTI if you can find it.
